i) Hindquarters:
The hindquarters include the hind portion, including the hind legs. Just like the posterior cut of beef, the hindcut of sheep consists of the rear part of the sheep (hindquarter). This part includes the legs of the sheep, which are flavourful and tender and, therefore, can be used in various culinary applications. This part has multiple sub-cuts, such as sirloin, loin, and shank.
ii) Forequarter:
The forequarter consists of the front section of the sheep. It includes front legs and shoulders. The cuts include neck, rib, shoulder, and breast. It is used in making stews, braising, and slow-cooking.
